Peppermint Chocolate Truffles

Peppermint Chocolate Truffles
- 16 ounces semi-sweet chocolate chips
- 1 cup heavy cream
- 1 1/2 teaspoons Peppermint Extract
- 6 ounces dark chocolate melting wafers
- 3 candy canes

Put a large pot on medium heat and add butter, heavy cream, chocolate chips, and peppermint extract.

Let the mixture sit for a couple of hours until solid.

Once solid, use a melon baller to scoop out small balls of chocolate. Using your hands, shape the balls into smoother rounds.

Place balls in the freezer for 1 hour.
- 5)
Finely dice 3 candy canes for peppermint topping.
- 6)
In a large bowl, melt 6 ounces of dark chocolate wafers. Once melted, dip the ball of chocolate into the chocolate and immediately top with crushed peppermint.
